(AOA) of the extracts of three varieties of sweet potato (Ipomoea batatas Lam.), namely,
Tainong 57 (TNG57), Tainong 66 (TNG66), and Tainong 73 (TNG73) cultivated in Taiwan.
Peeled root, unpeeled root, and skin samples were extracted with acetone, aqueous ethanol
(1:1 v/v), diethyl ether, distilled de-ionized water, ethanol, ethyl acetate (ETOAC), and methanol.
The total phenolics of the extracts were assayed by Folin-Ciocalteu method and the AOA
was analyzed by 2, 2’-diphenyl-1-picrylhydrazyl (DPPH) assay. The results outlined that ethanol
was the best solvent among the seven tested. The skin of the samples had in average
higher phenolic content and DPPH free radical scavenging activity (FRSA) than the flesh.
TNG73 had the highest phenolic content followed by TNG66 and then TNG57. In contrast,
TNG57 had the highest DPPH FRSA, while TNG66 and TNG73 had similar activities. This
lack of correlation between the total phenolic and DPPH FRSA suggested that phenolics are
not the only contributors to AOA of the samples analyzed. Further researches on these varieties
will take into account other secondary metabolites, including carotenoids.
