Phenolic content and antioxidant activity (AOA) of freeze-dried sweet potato
cultivars Tainong 57 (TNG57), Tainong 66 (TNG66), and Tainong 73 (TNG73) were
investigated. The AOA was assessed using 2,2-diphenyl-1-picrylhydradzyl (DPPH) and
2,2’-Azino-di-[3-ethylbenzothiazoline-6-sulfonate] (ABTS) assays. Raw (non-dried)
samples were used as control. The results showed that TNG73 had the highest phenolic
content, followed by TNG66, and then TNG57. The phenolic content was consistently
higher in the skin than the flesh samples. DPPH and ABTS free radical scavenging
activities (FRSA) of both raw and freeze-dried samples were high (>80%) at extract
concentration of 10 mg/ml and were dose-dependant. The lowest IC50 values (highest
AOA) were observed in TNG73, followed by TNG66, and then TNG57. The freezedrying
process resulted in decreases by 0.60 to 28% of total phenolics and 5.07 to 14.09
of total flavonoids. The ABTS IC50 increased by 13% in the freeze-dried samples in
comparison to the control.
