Arrowroot refers to any plant of the genus maranta; however, the term is most commonly used to describe the easily digested starch obtained from the rhizomes of Maranta arundinacae. Arrowroot rhizomes contain about 23% starch, which is used in biscuits, as a thickener and or stabilizers, in puddings, jellies, cakes, and for therapeutic use in broths, or for children and people with dietary restrictions.
