In this study, Zihyuxieshu yams (Dioscorea alata L. var. purpurea (Roxb.) M.) and

Yangmingshan yams (Dioscorea opposita Thunb.) were inoculated with six arbuscular

mycorrhizal fungi (AMF) species in field to investigate whether the inoculation of yams with

AMFs affected the amounts of antioxidant compounds and the antioxidant activity levels in

yam tubers. The results indicated that the mycorrhizal formation rates of various AMF species

ranged from 66.67% to 88.33%. Yam growth in symbiosis with AMFs affected the synthesis

and the amounts of polyphenols, flavonoids, and anthocyanins. The polyphenol contents

increased by 64% and 49%, respectively, for Zihyuxieshu yam inoculated with Glomus

etunicatum and Acaulospora sp. Similarly, the polyphenol contents improved by 67% and

75%, respectively, for Yangmingshan yams inoculated with Gigaspora sp. and Glomus

mosseae. The antioxidant capacities were used to assess the amounts of antioxidant

compounds in yam tubers inoculated with AMF. The affinities between the host plants and

AMF varied, thereby affecting the amounts of secondary metabolites and their antioxidant

activity levels.
