In this study, the use of CO2 laser processing methods for sensing zone on plastic optical fiber is demonstrated. Furthermore, the grating structure is also formed on the sensing zone by laser processing. Fiber gratings of different period are fabricated and discussed. The light intensity and spectrum measurement system are applied to detect the sucrose solution of the refractive index from 1.333 to 1.397 RIU. The optical fiber sensor with different periodic grating are discussed and show the effect on sensing slope, sensing resolution, standard deviation and sensing sensitivity
